... hand-picked to ensure the intense flavours of pear, lime and melon were retained from the vineyard, it was then fermented in a combination of new and slightly older French oak barrels. This oak, combined with 100 days of lees-stirring, and a partial malo-lactic fermentation has created a bright wine of delicate texture, harmonious tone and gentle creaminess. Vanilla and toasted characters compliment the resplendent fruit. Winemaker: Anthony Neilson
Predominantly Cabernet Sauvignon from 2003, to which some younger Merlot and Cabernet Franc have been blended. This provides mouth-filling complexity, finished off with fresher fruit characters. Evident in this full-bodied wine are fine textured tannins, well balanced. Suitable for a wide range of foods.
A full-bodied Margaret River Cabernet Sauvignon. Showing the balance and complexity expected of a top Cabernet, this is a distinctive wine with huge character & fruit quality. The enticing, developed bouquet is initially herbal, melding with great finesse to combine some cigar box characters and subtle berry fruits. The French and American barrels, in which the wine was matured, add soft oak nuances and grainy tannins to draw this wine together and add to its complexity.
A distinctive Willespie style, from 36 year old unirrigated vines. Minimal intervention and a nod to old world winemaking techniques complete this perfect expression of what makes Wilyabrup Cabernet Sauvignon so special. Medium-bodied, it opens to reveal layers of lifted raspberries, eucalypt, tomato leaf and cassis. Luscious, velvety tannins with finely balanced acid and exceptional fruit qualities ensure great ageing potential.
