Our Sémillon comes from unirrigated old vines that we pick at about 11-12% potential alcohol with enough natural acidity. A portion of the fruit is whole bunch pressed in a traditional wooden basket press. The wine is then fermented to dryness and left to go through full malolactic fermentation in order to keep it Preservative Free. Like all our wines it is estate-bottled, never fined or filtered. SO2-free. Try it with freshly picked strawberries!
we practice minimal handling and zero artificial input winemaking. We do not add Sulphur in our wine even during bottling. The wine is un-fined and un-filtered, as per our philosophy, therefore a fine sediment may form in the bottle over time. All our wines are Vegan-friendly. Drink now or cellar for 2-3 years. Enjoy!
Our Salasso Rose comes from old, low yielding, unirrigated Grenache vines, grown using sustainable vineyard practices. All our wines are Vegan-friendly. Serve chilled at around 11-12 C.
