1999 Semillon Chardonnay

The 1999 Chardonnay fruit was hand picked on 5th March with a Baumé of 13.4 and the Semillon fruit was hand picked on 6th March 1999 with a Baumé of 12.8. The yield was approximately 8.5 tonnes per hectare. The fruit was fermented to dryness in separate tanks, without the use of oak, then blended in the ratio 80% Semillon and 20% Chardonnay. The wine was bottled in late May 1999, some 8 weeks after harvest. This unwooded blend is straw in colour, has subtle aroma and the fruit is balanced by crisp acidity. 13.5% Alc/Vol.

1999 Semillon

The 1999 Semillon was hand picked on 6th March 1999 with a Baumé of 12.8. The yield was 8.5 tonnes per hectare. The fruit was crushed and destemmed. The must was then pressed with only free run juice used for this wine. The juice was cooled and transferred to stainless steel tanks where it was fermented to dryness, without the use of oak. The wine was bottled in late May 1999, some 8 weeks after harvest. This Semillon is an elegant wine with citrus and fresh fruit characters, and a clean and crisp finish. 13.5% Alc/Vol.

1999 Cabernet Merlot

This wine is 60% Cabernet Sauvignon and 40% Merlot fruit grown in Mudgee in the Central Ranges of NSW. This is a light to medium bodied wine with blackcurrant aroma, earthy tones with a soft finish.
